Vegetable Base
- 1 small onion finely chopped
- 2 celery stalks finely chopped
- 2 garlic cloves minced fresh
- 2 tbsp extra virgin olive oil
Sauce
- 54 oz canned crushed tomatoes check labels for zero added sugar
- 1/4 cup fresh basil roughly chopped
- 1/2 tsp salt adjust later to suit personal taste
- 1/2 tsp black pepper freshly cracked
Start by finely chopping your small onion and celery stalks. Mince your two garlic cloves into very tiny pieces. Consistent, small knife work ensures smooth and even cooking.
Place your large pot over medium stovetop heat. Pour in the two tablespoons of rich olive oil. Let the oil get shimmering hot in the pan. Add your chopped onion, celery, and freshly minced garlic. Sauté them gently until they turn soft and tender. This usually takes about five minutes of continuous stirring. Do not let the garlic turn dark brown.
Pour all the canned crushed tomatoes into the pot. Stir everything together until the ingredients are well combined. Bring the vibrant red mixture to a gentle boil.
Once boiling, immediately reduce the heat to a low setting. Place a tight-fitting lid securely on your cooking pot. Let the sauce simmer gently for exactly fifteen minutes.
Carefully remove the hot pot from the heat source. Stir in your roughly chopped fresh green basil leaves. Add your half teaspoon of salt and black pepper now. Taste the sauce carefully and adjust the seasoning if preferred. Serve piping hot over your favorite low-carb noodles.
Always stir with a sturdy wooden spoon, which will not scratch the pot or conduct heat into your hand. For an even thicker sauce, leave the lid off during the last five minutes of simmering. Store in an airtight container in the fridge for up to five days, or freeze for up to three months.
What a serving is. This makes about six cups of sauce. A serving here is half a cup, the same measure a jar of sauce declares on its label, so the numbers above compare like with like against the store-bought jar.
