- 3 cloves garlic minced fresh

- 1 small zucchini 118 g, chopped into bite-sized pieces
- 6 oz 170.1 g green beans, chopped
- 4 cups 946.35 ml beef broth (Or chicken broth)
- 2/3 cup 99.33 g diced tomatoes, canned
- 1 tbsp tomato paste
- 8 oz 226.8 g cauliflower florets, cut into 1-inch pieces
Brown the beef
Grab a large pot and brown the ground beef until mostly cooked through. Break it up into small pieces as it cooks. Transfer to a bowl and set aside.
Cook the aromatics
Add olive oil to the same pot. Toss in the chopped celery and onion. Sauté until they soften up and smell amazing, about 3 minutes.
Build the flavor
Add minced garlic and red pepper flakes. Season lightly with salt and pepper. Stir for another minute.
Add the veggies
Mix in green beans and zucchini. Toss everything together. Cook until the vegetables start to soften, 3 to 4 minutes.
Create the broth
Pour in the beef broth, diced tomatoes, and tomato paste. Stir it all together and bring to a gentle simmer.
Add cauliflower
Add cauliflower florets to the simmering liquid. Cook until tender but not mushy, 5 to 7 minutes.
Return the beef
Return the browned ground beef to the pot. Stir everything together and cook for another minute or two.
Taste and adjust
Taste your soup and add more salt or pepper if needed. Every batch is different depending on your broth.
Storage: Store in an airtight container in the fridge for up to 5 days. Flavors improve overnight. Can be frozen for several months, though vegetables may soften slightly upon thawing.
