Ingredients
  

  • 3 large eggs Must be separated cleanly into whites and yolks.
  • 3 tbsp whole milk cottage cheese OR cream cheese Ensure the cream cheese is softened if using.
  • 1/4 tsp cream of tartar Helps stabilize the egg whites for maximum volume.
  • 1 packet artificial sweetener 1 g packet. Balances the savory notes of the cheese and eggs.

Instructions
 

  • Preheat your oven to 300°F. Take your baking sheet and line it with parchment paper. You can also lightly spray the paper with non-stick cooking spray to guarantee the bread slides right off.
  • Carefully separate the egg whites from the egg yolks. Let the egg whites fall into a clean glass or metal bowl, and place the yolks into a separate medium-sized mixing bowl. Ensure not a single drop of yolk gets into the whites.
  • To the bowl with egg yolks, add 3 tablespoons of cottage cheese or softened cream cheese, and 1 packet of artificial sweetener. Blend together using a whisk or mixer on low speed until completely smooth with no large lumps.
  • Add 1/4 teaspoon of cream of tartar to the bowl of clean egg whites. Beat continuously on a high speed setting with an electric mixer until stiff, glossy peaks form and stand straight up.
  • Gently pour the smooth egg yolk mixture over the stiff egg whites. Using a rubber spatula, gently fold the mixtures together by slicing down the middle and scraping the bottom. Do not stir aggressively, and stop as soon as no white streaks remain.
  • Scoop the batter onto the prepared parchment paper to form four even, round circles roughly 4 inches in diameter and 3/4 of an inch thick. Smooth the tops slightly with the back of your spoon.
  • Place the baking sheet on the middle rack of the oven and bake for approximately 15 minutes. Watch closely until they turn a beautiful golden brown color.
  • Remove from the oven, let sit on the pan for two minutes, then transfer to a cooling rack to cool completely to room temperature.

Notes

Straight out of the oven, the bread will have a crispy, meringue-like texture. To transform it into a soft, chewy, and flexible sandwich bun, place the completely cooled buns into a sealed ziplock bag or airtight container and let them rest on your counter overnight.
