Ingredients
  

  • 3 cups FINELY shredded cooked chicken Ensure it is completely chilled before mixing
  • 1/2 cup Light Mayonnaise Preferably Duke's or Hellmann's
  • 3 tbsp dried minced/chopped onion Do not substitute with fresh raw onions
  • 1 tsp celery salt
  • 1 pinch black pepper

Instructions
 

  • Ensure your finely shredded cooked chicken is completely chilled. Warm chicken will compromise the texture of your dressing.
  • Place the shredded chicken into a large, spacious mixing bowl.
  • Add the light mayonnaise, dried minced onion, celery salt, and pepper.
  • Using thoroughly washed hands, mix all the ingredients together vigorously. Massage the dressing into the chicken to ensure a perfectly creamy texture. You may also use a fork if you prefer.
  • Cover the mixing bowl tightly with a lid or plastic wrap.
  • Place the bowl in the refrigerator to chill for at least 20 minutes. This allows the dried onions to rehydrate and the flavors to blend.
  • Give the salad one final gentle stir before serving.
  • Enjoy your salad on toasted bread, in a crisp lettuce wrap, or with crackers!

Notes

This salad actually tastes much better the next day as the flavors continue to develop. Store in an airtight container for up to 3-5 days in the refrigerator.
