Easy Cheeseburger Salad

Ingredients
  

  • 5 oz lean ground beef 90/10 or 93/7 lean
  • 2 cups iceberg or romaine lettuce chopped
  • 2 tbsp chopped dill pickles
  • 1 tsp yellow mustard
  • 1 tbsp light Thousand Island dressing
  • 2 tbsp shredded cheddar cheese

Instructions
 

  • Wash and chop lettuce into bite-sized pieces. Divide between two serving bowls and set aside.
  • Heat a medium skillet over medium-high heat. Add ground beef, breaking apart with wooden spoon. Cook 5-6 minutes, stirring occasionally, until browned and cooked through. Season with salt and pepper.
  • Reduce heat to low. Sprinkle cheddar cheese over hot beef and let melt for 1 minute.
  • Divide cheesy beef mixture between lettuce-filled bowls. Sprinkle chopped pickles evenly over each serving.
  • In small bowl, mix yellow mustard with Thousand Island dressing. Drizzle half over each salad.
  • Serve immediately while beef is warm for best temperature contrast.

Notes

Don't drain beef completely after browning - leave a small amount of flavorful drippings
Use good-quality dill pickles and chop just before serving for best crunch
Can substitute ground turkey for beef (add extra seasoning)
Store components separately for meal prep; assemble when ready to eat
