Easy Keto Granola Bars

Ingredients
  

  • 2 cups mixed chopped nuts I used 1 cup almonds, 1 cup walnuts and pecans
  • 1/4 cup pumpkin seeds raw and unsalted preferred
  • 1/4 cup sunflower seeds raw and unsalted preferred
  • 1/4 cup ground flaxseed acts as a crucial binder
  • 2 tbsp almond butter creamy texture works best
  • 1 large egg white whisked well before using
  • 2 tbsp granulated sweetener keto-friendly variety
  • 1/3 cup sugar-free chocolate chips or chopped dark chocolate (min 85% cocoa)
  • 1 tsp vanilla extract pure extract for best flavor

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking tray with good quality parchment paper, leaving a little overhang on the sides.
  • Add the mixed nuts and seeds to a food processor. Use short pulses to break them down into a chunky texture.
  • Pour the chopped nuts and seeds into a large mixing bowl. Stir in the ground flaxseed, granulated sweetener, and most of the chocolate chips, reserving a small handful of chips for the topping.
  • In a separate small bowl, whisk the egg white briskly until frothy. Stir in the almond butter and vanilla extract, whisking until it forms a smooth liquid.
  • Pour the wet mixture over the dry ingredients and fold together with a spatula until every piece is evenly coated and the mix feels sticky.
  • Transfer the sticky dough into the lined pan. Press the dough down extremely firmly using the bottom of a measuring cup until it is completely flat and packed tight.
  • Sprinkle the reserved chocolate chips across the top and gently press them in. Bake for 15 minutes until the edges are light golden brown.
  • Remove from the oven and let cool completely in the pan for at least one full hour. Once cold, lift out using the parchment paper and cut straight down into four bars.

Notes

You can easily swap the almond butter for creamy peanut butter. If you want to use different nuts, just ensure you maintain the exact same total volume of dry ingredients.
