- 1 cucumber diced

Marinate the Chicken: In a medium bowl, mix olive oil, minced garlic, dried oregano, smoked paprika, ground cumin, salt, and pepper. Add the chicken thighs, coating them well. Cover the bowl and refrigerate for at least 1 hour (overnight is best).
Grill the Chicken: Preheat a grill or skillet over medium-high heat. Grill the chicken for 6-7 minutes per side until fully cooked and charred. Rest the chicken for 5 minutes before slicing it thinly.

Assemble the Gyros: Warm the pita bread. Place the sliced chicken on the pita, add diced cucumber, tomatoes, red onion, and drizzle with tzatziki sauce. Garnish with fresh parsley.
