Ingredients
  

Crust Ingredients

  • 2 cups wholewheat pastry flour
  • 1/2 tsp salt
  • 3/4 cup unsalted butter cold and cubed
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp apple cider vinegar
  • 3 tbsp ice cold water

Filling Ingredients

  • 8 medium apples peeled and sliced
  • 1 tbsp lemon juice
  • 1/2 cup coconut sugar or brown sugar
  • 3 tbsp maple syrup
  • 2 tbsp cornstarch
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg

Egg Wash

  • 1 large egg
  • 1 tbsp milk

Instructions
 

  • Whisk flour and salt. Cut in cold butter until coarse crumbs form.
  • Mix maple syrup, vanilla, and vinegar. Add to flour with water; mix until dough forms. Refrigerate for 1 hour.
  • Toss sliced apples with lemon juice, sugar, syrup, cornstarch, and spices.
  • Roll out dough, place in pie dish, and fill with apple mixture.
  • Create lattice top, brush with egg wash, and bake at 400°F for 45-50 minutes.

Notes

Always bake fruit pies on a parchment-lined baking sheet to catch any bubbling juices.
