Ingredients
  

  • 1 tbsp salted butter
  • 1 large egg whisked and divided
  • 1 tbsp coconut flour
  • 1/4 tsp baking powder gluten-free if needed
  • olive oil spray as needed
  • 1 slice sharp cheddar cheese
  • 1 slice deli ham

Instructions
 

  • Whisk the egg in a small bowl until completely smooth.
  • Melt butter in a small ramekin in the microwave for 30 seconds.
  • Mix exactly half of the whisked egg, coconut flour, and baking powder into the butter.
  • Microwave the batter for 90 seconds. Let it cool, then slice horizontally.
  • Heat a skillet with olive oil spray. Toast bread slices for 2 minutes per side.
  • Cook the remaining whisked egg in the skillet to form a small patty.
  • Assemble: bottom bread slice, cheese, warm ham, egg patty, top bread slice.
  • Serve immediately and enjoy your delicious low-carb breakfast.

Notes

Let your microwave bread rest for at least three minutes before slicing to allow the steam to escape and the structure to firm up. Also, warm your deli ham in the skillet for 30 seconds before assembly to help melt the cheese faster.
