Ingredients
  

  • 1 tablespoon butter unsalted
  • 1/2 large onion chopped (yellow or white)
  • 2 cloves garlic minced
  • 3 cups chicken broth low-sodium
  • 1 1/2 cups heavy cream
  • 4 cups broccoli fresh, finely chopped
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon black pepper freshly ground
  • 1/2 teaspoon salt adjust to taste
  • 3 1/2 cups sharp cheddar cheese freshly shredded from block

Instructions
 

  • Melt butter in a large, deep pot over medium heat. Add chopped onion and minced garlic. Stir for about 2 minutes until onion turns translucent and fragrant.
  • Pour in the chicken broth and heavy cream. Add finely chopped broccoli, smoked paprika, black pepper, and salt. Stir well to combine.
  • Turn up heat and bring the mixture to a rolling boil. Once boiling, immediately reduce heat to low.
  • Let the soup simmer gently for 15-20 minutes, until broccoli is fork-tender but not mushy.
  • Remove pot from heat. Add shredded cheddar cheese half a cup at a time, stirring constantly until each addition melts completely before adding more.
  • Taste and adjust seasoning as needed. Serve hot and enjoy!

Notes

Storage: Store in airtight containers in the fridge for up to 1 week. Freezes beautifully for up to 3 months.
Reheating: Reheat gently over low-medium heat on stovetop, stirring frequently. Add a splash of broth if too thick. For microwave, use 30-second intervals and stir between each.
Texture Options: For smooth soup, use an immersion blender after adding cheese. For thicker soup, add 1/2 tsp xanthan gum or 1-2 tbsp arrowroot powder during simmering.
Variations: Add shredded rotisserie chicken, crispy bacon bits, or cooked crumbled sausage for extra protein. Try mixing cheese varieties like Gruyere or smoked Gouda for different flavors.
Important: Always use freshly shredded cheese from a block (not pre-shredded) for smooth melting. Remove pot from heat before adding cheese to prevent graininess.
