No-bake keto buckeyes with a firm peanut butter center, dipped three quarters of the way into sugar-free chocolate on a toothpick so the bare circle stays on top. Almond flour firms the filling where sugar used to. 2.8g net carbs each, makes 24.

Filling
- 1 cup natural creamy peanut butter 256 g, no added sugar, stirred well
- 4 tbsp unsalted butter 57 g, softened and not melted
- 3/4 cup powdered erythritol blend 90 g, powdered and never granulated
- 1/4 cup blanched almond flour 28 g, plus more if the filling is soft
- 1 tsp vanilla extract
- 1/4 tsp fine sea salt skip if the peanut butter is salted
Shell
- 6 oz sugar-free dark chocolate chips 170 g
- 1 tbsp refined coconut oil refined, so there is no coconut flavor
Filling: Beat the softened unsalted butter with the natural creamy peanut butter until smooth. Add the powdered erythritol blend in thirds, then the blanched almond flour, vanilla extract and fine sea salt. It should hold together like soft cookie dough; add more almond flour a tablespoon at a time if it sticks badly.
Roll: Shape into 24 balls, about 1 inch and 18 g each, on a parchment-lined sheet. Push a toothpick into each ball now, before freezing.
Freeze: 45 minutes, until firm all the way through and barely giving under a fingertip.
Melt: Microwave the sugar-free dark chocolate chips with the refined coconut oil in a deep narrow bowl in 30-second bursts, stirring between each, stopping while a few chips are still visible.
Dip: Working with 4 or 5 balls at a time and leaving the rest in the freezer, lower each one by its toothpick until three quarters is coated, leaving a bare circle on top. Let the excess drip off, set on parchment, remove the toothpick and smooth the hole closed.
Set: Refrigerate 15 minutes, until the shells are firm and click under a fingernail.
Powdered sweetener only. Granulated will not dissolve into a cold filling and stays gritty.
Freeze properly before dipping. A soft center makes the chocolate pool into a thick, lumpy shell instead of setting thin on contact.
Peanut butters vary in oil content. The almond flour is the adjustment: add more, a tablespoon at a time, until the filling rolls cleanly.
Storage: airtight in the refrigerator with parchment between layers up to 1 month, or frozen up to 3 months.
Nutrition counts the full 6 oz of chocolate. Some will be left in the bowl, so the figure per buckeye is slightly conservative.
