Ingredients
  

  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1/4 cup almond flour
  • 1/4 teaspoon salt

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine cheddar and mozzarella cheeses with garlic powder, onion powder, paprika, black pepper, and salt. Toss to evenly distribute the spices.
  • Whisk the egg in a separate bowl and pour it over the cheese mixture. Add almond flour and mix until a sticky, cohesive mixture forms.
  • Scoop tablespoon-sized portions onto the baking sheet, spacing them 2 inches apart. Flatten slightly.
  • Bake for 10–12 minutes or until golden brown around the edges.
  • Let the puffs cool on the baking sheet for 5 minutes before serving.

Notes

Try swapping cheddar for pepper jack, gouda, or gruyere to vary flavor.
Add herbs like Italian seasoning or smoked paprika for additional depth.
Serve with avocado dip, marinara sauce, or atop salads and soups.
Store leftovers in an airtight container in the fridge and reheat in the oven for crispiness.
