Ingredients
  

For the Chicken

  • 1 1/2 lb boneless skinless chicken breasts 680 g - 6 small, or 3 large split into 6 cutlets
  • 2 cups blanched almond flour 192 g, superfine - not almond meal
  • 1/2 cup Parmesan finely grated (50 g), for the coating
  • 3 large eggs beaten
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp fine salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil for frying

For the Topping

  • 2 cups low-sugar marinara sauce 480 ml - under 5g net carbs per 1/2 cup
  • 1 1/2 cups mozzarella shredded, low-moisture (170 g)
  • 1/3 cup Parmesan grated (33 g), over the mozzarella
  • fresh basil a few leaves, optional, added off the heat

Instructions
 

Prepare the Cutlets

  • Pound them even: Slice large breasts horizontally into two thin pieces. Cover with plastic wrap and pound each cutlet to an even 1/4 inch throughout. Even thickness matters more than thinness.
  • Season and dry: Season with the salt, then pat thoroughly dry with paper towel. Wet chicken sheds its coating.

Bread and Fry

  • Set up three stations: Preheat the oven to 400°F and line a rimmed baking sheet with parchment. Put a few tablespoons of plain almond flour on one plate, the beaten eggs in a shallow bowl, and the remaining almond flour mixed with the 1/2 cup Parmesan, garlic powder, onion powder and pepper on a third plate.
  • Bread: Dust each cutlet lightly with plain almond flour, dip in egg letting the excess drip off, then press firmly into the almond flour and Parmesan mixture on both sides. Pressing is what makes the crust stay attached.
  • Fry: Heat the oil in a large non-stick pan over medium. Fry 2 to 3 minutes per side until deep golden, working in two batches so the pan is not crowded. Almond flour burns quickly, so keep the heat at medium. Lift onto paper towel - the chicken will not be cooked through yet.

Sauce and Bake

  • Top: Arrange the cutlets on the lined sheet. Spoon about 1/3 cup marinara over each, leaving a border of bare crust around the edge so it stays crunchy. Scatter the mozzarella, then the Parmesan.
  • Bake: 10 to 15 minutes at 400°F, until the cheese is melted and starting to blister. The chicken should read 165°F at the thickest point.
  • Rest: Give it 3 minutes on the pan so the cheese sets, then scatter torn basil off the heat.

Notes

The order matters more than the coating. Brown the crust in the pan first and let it set before anything wet touches it. Saucing a pale cutlet is the single most common reason keto chicken parmesan turns out soggy.
Almond flour will not brown in a dry oven. It holds moisture and has no starch to set, so the frying step is not optional in this version.
No-fry version: skip the almond flour entirely. Dip the cutlets in egg, press into 1 cup grated Parmesan mixed with the same seasonings, and bake at 400°F for 20 minutes before saucing, then 8 to 10 minutes more. Parmesan browns in dry heat because it holds almost no water.
Medium heat when frying. Almond flour goes from golden to burnt faster than wheat, and burnt almond tastes bitter.
Blanched almond flour, not almond meal. The skins in almond meal burn before the rest browns.
The marinara is where the carbs are. Ordinary jarred sauce can carry 20g of sugar per cup. Pick one under 5g net carbs per 1/2 cup.
Chicken thighs are more forgiving than breast. Pound the same way and add 2 to 3 minutes to the bake.
Storage: 5 days refrigerated, 3 months frozen. Freeze fried but unsauced, then sauce fresh when reheating. Reheat at 375°F for 8-10 minutes; the microwave ruins the crust.
