Keto Hot Chocolate Mix

A sugar-free keto hot chocolate mix made with cocoa and finely ground unsweetened chocolate, so every mug is rich and smooth instead of thin and chalky. Keep a jar in the cupboard and stir 2½ tablespoons into hot milk whenever you want a cup.

Equipment

  • Food processor or a microplane grater and a fine sieve
  • Airtight glass jar 1 pint, or two half-pint jars for gifts
  • Small saucepan for heating the milk
  • Milk frother optional, for a foamy top

Ingredients
  

For the Mix

  • 1 1/4 cups powdered erythritol sweetener 1:1 sugar replacement, confectioners style
  • 3/4 cup unsweetened cocoa powder 64 g, Dutch-process or natural
  • 2 oz unsweetened baking chocolate 57 g, 100% cacao, chopped
  • 1 tsp vanilla extract
  • 1/4 tsp fine sea salt

To Serve (Per Mug)

  • keto milk of choice 10-12 oz per mug: unsweetened almond milk, or part heavy cream

Instructions
 

Make the Mix

  • Chop: Cut the unsweetened baking chocolate into pea-sized pieces so it grinds evenly instead of warming into a paste.
  • Process: Add the powdered erythritol sweetener, cocoa powder, chopped chocolate, vanilla extract and fine sea salt to a food processor. Pulse in short bursts, scraping down once, until the chocolate disappears into a fine, even powder with no visible flecks. (No processor: grate the chocolate finely, whisk everything together and sieve.)
  • Store: Spoon into a clean, completely dry jar and seal. Keeps up to 3 months in a cool, dry cupboard. Never use a wet spoon.

Make One Mug

  • Heat: Warm 10-12 oz of your keto milk of choice until steaming with small bubbles at the edge. Do not boil.
  • Paste: Put 2½ tablespoons of mix in a mug, add about 2 tablespoons of the hot milk and stir to a smooth, glossy paste.
  • Finish: Pour in the rest of the milk slowly, stirring. Add another ½ tablespoon of mix for a stronger, sweeter cup.

Notes

Nutrition is for 2½ tablespoons of mix only. A mug made with 10 oz unsweetened almond milk is about 2.5g net carbs; with ¼ cup of that milk swapped for heavy cream, about 4g.
Use a powdered sweetener. Granulated does not fully dissolve and leaves grit at the bottom of the mug. Allulose tastes good but tends to cake in the jar.
Variations for the whole batch: peppermint, 1-2 tsp peppermint extract; mocha, 2-3 tbsp instant espresso powder; Mexican, 1½ tsp cinnamon plus ½ tsp chipotle powder; thicker, ½ tsp glucomannan.
