Ingredients
  

  • For the Bars:
  • ½ cup Butter
  • ¾ cup Smooth Peanut Butter
  • 1 cup Low Carb Granular Brown Sweetener
  • ½ teaspoon Salt
  • ½ tablespoon Vanilla Extract
  • 2 large Eggs
  • 1 cup fine-blanched Almond Flour
  • For the Peanut Butter Icing:
  • ½ cup Low-Carb Confectioners Powdered Sweetener
  • ¼ cup Smooth Peanut Butter
  • 4 tablespoons Unsweetened Almond Milk
  • ½ teaspoon Vanilla Extract

Instructions
 

  • Preheat oven to 350°F (180°C) and line a 9x9 inch baking pan with parchment paper.
  • In a small saucepan over medium heat, melt the butter and ¾ cup peanut butter together. Stir until smooth and combined. Remove from heat and set aside.
  • In a large mixing bowl, combine the low-carb brown sweetener and salt. Break up any clumps until lump-free.
  • Add the almond flour to the sweetener mixture and mix thoroughly.
  • Add the vanilla extract and eggs to the bowl. Mix until smooth.
  • Pour the melted peanut butter and butter mixture into the bowl. Mix until all ingredients are fully combined.
  • Spread the batter evenly in the prepared baking pan.
  • Bake for 20-25 minutes until edges are set and lightly golden.
  • While bars are baking, prepare the icing: In a small saucepan over medium-low heat, melt ¼ cup peanut butter.
  • Add almond milk and vanilla extract to the melted peanut butter. Stir until smooth.
  • Remove from heat and add powdered sweetener. Stir until smooth and slightly thin consistency.
  • Remove bars from oven and let cool until warm to the touch but not hot.
  • Pour the icing over the warm bars and spread evenly.
  • Let the icing set for several minutes before slicing into 12 bars.

Notes

Ice the bars while they're still warm for best icing consistency
Store in an airtight container at room temperature for up to 5 days
Can be refrigerated for up to 2 weeks or frozen for up to 3 months
Adjust icing consistency with additional almond milk if needed
Room temperature ingredients mix more easily for better texture
