This Keto Reuben in a Bowl is a low-carb twist on the classic Reuben sandwich, made in just one skillet with all the bold flavors you love—without the bread!
Make the dressing: In a small bowl, mix together the mayonnaise, sugar-free ketchup, horseradish, hot sauce, Worcestershire sauce, salt, and pepper. Stir well and set aside.
Cook the corned beef: In a large skillet over medium heat, melt the butter. Add the corned beef strips and cook, covered, for about 5 minutes until warmed through and slightly crispy on the edges.
Add the cabbage: Add the coleslaw mix to the skillet. Cover and cook for an additional 5 minutes until softened but still slightly crunchy. Stir to combine with the corned beef.
Melt the cheese: Lay Swiss cheese slices over the top of the mixture. Cover and let melt naturally, or place under a broiler for 2–3 minutes for a bubbly, golden finish.
Serve: Drizzle with prepared Russian dressing, garnish with chopped scallions if desired, and serve hot.
Notes
Substitute sauerkraut for coleslaw mix for a more traditional Reuben flavor.Try pastrami or turkey in place of corned beef if desired.Add toppings like avocado, pickle slices, or jalapeños for extra flavor and texture.Perfect for meal prep – cool completely before storing in airtight containers.
