Keto Strawberry Jam

Ingredients
  

  • 2 pounds fresh strawberries stems and hulls removed
  • 1/4 cup keto sweetener Joy Filled Eats Sweetener erythritol, monk fruit, or allulose
  • 1 tsp lemon juice fresh preferred
  • 1 tsp thickening agent glucomannan or xanthan gum

Instructions
 

  • Hull the strawberries by removing stems and tough white cores using a small paring knife. Add prepared berries to a medium saucepan.
  • Use a potato masher to smash the strawberries, breaking them down to release their natural juices. Leave some chunky pieces for texture.
  • Place the saucepan over medium heat and cook the berries for about 10 minutes, stirring occasionally, until they become liquidy and soft.
  • Stir in the keto sweetener and lemon juice. Mix thoroughly until the sweetener dissolves completely. Taste and adjust sweetness if needed.
  • Sprinkle the thickening agent over the hot berry mixture and whisk vigorously to prevent clumps from forming.
  • Transfer the hot jam into clean glass jars and let cool to room temperature before sealing. Refrigerate for at least 4 hours until the jam thickens to perfect spreading consistency.

Notes

Sweetener Options: Erythritol, monk fruit, and allulose all work well. Adjust to taste based on your preferred sweetness level and the natural sweetness of your strawberries.
Thickening: The jam will look thin while hot but thickens significantly as it cools and refrigerates. If still thin after overnight chilling, reheat gently and add another 1/2 tsp of thickening agent.
Storage: Store in airtight glass jars in the refrigerator for up to 2 months. For longer storage, freeze in freezer-safe containers for up to 6 months.
Variations: Try using frozen strawberries (thawed and drained), or mix with other berries like raspberries or blueberries. Add 1 tsp vanilla extract or citrus zest for flavor enhancement.
