Ingredients
  

  • 6 oz bacon (beef or turkey) diced into small, even pieces (about 5 slices)
  • 1 cup onion finely chopped
  • 1 tsp minced garlic freshly minced
  • 1 cup red bell pepper diced evenly
  • 1 cup green bell pepper diced evenly
  • 12 large eggs beaten well until smooth and pale yellow
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper freshly cracked
  • 1 cup cheddar cheese shredded (4 oz)

Instructions
 

  • Preheat your oven to 350 degrees Fahrenheit. Grease a standard 9x13-inch baking dish inside really well with butter or cooking spray.
  • Place a large skillet on your stove over medium heat. Drop your diced bacon right into the dry pan. Cook slowly for two or three minutes until the pieces just become soft.
  • Toss in your chopped onion and minced garlic. Stir everything constantly with a wooden spoon until the meat starts turning a beautiful brown.
  • Throw in the diced bell peppers and mix them right into the savory base. Cover your skillet tightly and let the veggies cook for about five to ten minutes until wonderfully soft. Stir occasionally so nothing burns.
  • Once soft, take the pan completely off the heat and let the mixture cool down. This is crucial so you don't accidentally scramble the eggs.
  • While the veggies cool off, carefully crack all twelve eggs into a large glass mixing bowl. Whisk them vigorously until you have a smooth, pale yellow liquid. Sprinkle in your sea salt and black pepper and whisk again.
  • Check that your skillet mixture is warm, not burning hot. Gently scrape the cooked veggies and meat right into the egg bowl. Stir softly to combine, then fold in your shredded cheddar cheese.
  • Carefully pour the whole bowl into your greased baking dish and spread the ingredients out evenly. Place the dish on the middle rack of your oven.
  • Bake for 25 to 30 minutes. It is done when the edges pull away from the pan slightly, the top looks golden brown, and the center holds firm without jiggling.
  • Take the baking dish out of the oven and let it sit out for five full minutes so the slices hold their shape. Serve warm!

Notes

Mise en place (putting everything in its place) is highly recommended for this recipe. Chop all your vegetables, measure your spices, and grate your cheese before turning on the stove to completely eliminate cooking stress.
