Ingredients
  

Base

  • 1 packet acai berry puree 100 grams, unsweetened, keep frozen solid
  • 1/4 cup coconut milk canned, full-fat variety only
  • 2 tbsp keto yogurt optional, unsweetened plain
  • 1 cup frozen strawberries or other low carb berries, keep frozen until immediately needed

Toppings

  • 2 tbsp walnuts roughly chopped
  • 2 tbsp blueberries fresh and washed
  • 1/4 cup keto granola grain-free, low-sugar

Instructions
 

  • Place your serving bowl into the freezer to chill for at least ten minutes.
  • Pour the canned coconut milk and optional keto yogurt into your blender jar.
  • Add the frozen strawberries directly on top of the liquids.
  • Run the sealed acai packet under warm water for ten seconds.
  • Break the puree into chunks, open the packet, and drop chunks into the blender.
  • Start the blender on a very low speed.
  • Gradually increase to medium, using a tamper tool to push ingredients into the blades.
  • Blend for about forty-five seconds until smooth, thick, and creamy.
  • Scoop the thick mixture into your thoroughly chilled serving bowl.
  • Arrange the walnuts, fresh blueberries, and keto granola neatly on top.
  • Serve immediately with a spoon and enjoy.

Notes

Acai bowls do not store well once blended. If you freeze the leftovers, they become a solid block of ice. If left in the fridge, they melt into soup. Always make this recipe fresh right before eating.
