Instructions
Wash the English cucumber thoroughly under cold water.
Place a mandoline slicer directly over a large, sealable jar or deli container and slice the entire unpeeled cucumber into thin, uniform rounds.
Add the chopped spring onion and minced garlic to the jar with the cucumbers.
Pour in the soy sauce, fish sauce, and toasted sesame oil.
Add the sugar, a pinch of MSG, and sesame seeds on top.
Secure the lid tightly and shake the container vigorously for 30 seconds to emulsify the dressing.
Remove the lid, add optional chili flakes if desired, and serve immediately.
Notes
For the best texture, eat this immediately after shaking. Using an English cucumber is essential to avoid excess wateriness.
