Keto Creme Brulee

A silky vanilla keto creme brulee with a thin, glassy top that really cracks. Golden erythritol melts and hardens under the torch like sugar, and the custard comes out of the water bath while it still wobbles so it chills smooth, not eggy. 5 ramekins at 3.5g net carbs each.

Equipment

  • Five 5-ounce ramekins
  • Baking dish deep enough for a water bath
  • Kitchen torch or use the broiler
  • Whisk

Ingredients

  • 2 cups heavy cream 480 ml
  • 5 large egg yolks
  • 1/3 cup powdered erythritol 40 g, for the custard
  • 2 tsp vanilla extract or seeds of 1 vanilla bean
  • 2 tbsp golden erythritol for the top

Instructions

  • Warm: Heat the heavy cream until it steams and small bubbles appear at the edge; do not boil. Off the heat, stir in the vanilla extract and cool 10 minutes. Heat the oven to 325°F and boil a kettle.
  • Whisk: Whisk the large egg yolks with the powdered erythritol until pale and smooth, about 1 minute.
  • Combine: Pour the warm cream into the yolks in a thin stream, whisking gently. Skim off any foam.
  • Fill: Divide among five 5-oz ramekins set in a baking dish. Place the dish in the oven and pour hot water into it halfway up the ramekins.
  • Bake: Bake 35-40 minutes, until the edges are set and the centers jiggle like jelly.
  • Chill: Cool 20 minutes in the water bath, then on a rack. Cover and refrigerate at least 4 hours.
  • Torch: Blot the tops dry, sprinkle about 1 tsp golden erythritol evenly over each, and torch until melted and amber. Let harden 5-10 minutes before serving.

Notes

Use golden erythritol on top. It melts, browns and hardens like sugar. Allulose stays sticky and xylitol does not harden.
Pull them while they wobble. Overbaked custard turns eggy and grainy.
No torch: broil on the top rack about 2 minutes, watching closely, then chill 10 minutes.
Storage: untorched custards keep covered in the fridge up to 3 days. Torch just before serving.
