The best part of a creme brulee is the moment the spoon taps the top and it cracks like thin ice. My first sugar-free attempt did not crack. It squished. The sweetener I used melted into a sticky, wet syrup that never hardened, and the custard underneath had curdled at the edges because I left it in the oven too long.
Getting a sugar-free version right comes down to two things: which sweetener goes on top, and when the custard comes out of the oven.
This keto creme brulee has a smooth, set vanilla custard and a thin, glassy top that genuinely shatters under the spoon. Five ingredients, five ramekins, and 3.5g net carbs each.
Why This Keto Creme Brulee Works
Golden erythritol on top. Erythritol melts under a torch and sets hard again as it cools, which is exactly what sugar does. The golden or brown-style blends also take on color, so the top turns amber rather than staying pale.
A thin, even layer. A heap of sweetener melts unevenly and burns at the high points before the low points have melted. About a teaspoon spread right to the edges is enough.
Out of the oven while it still wobbles. The custard keeps cooking as it cools. Pulled when the edges are set and the middle still jiggles like jelly, it chills to silky. Left in until it is firm all the way across, it turns eggy and grainy.
A water bath. Baking the ramekins in hot water keeps the heat gentle and even, so the edges do not overcook before the center sets.
Which Sweetener Makes the Top Crack?
| Sweetener | What it does under the torch |
| Golden or brown erythritol | Melts, browns and sets hard. The best choice. |
| White granulated erythritol | Melts and sets hard, but stays pale. |
| Allulose | Browns fast, then stays soft and sticky. |
| Xylitol | Melts but never really hardens. |

Recipe Overview
- Prep Time: 15 minutes, including cooling the cream
- Bake Time: 35–40 minutes
- Cooling and Chilling: about 4 hours 20 minutes
- Total Time: about 5 hours 15 minutes
- Makes: 5 ramekins (5 ounces each)
- Net Carbs: 3.5g per ramekin
Ingredients

| Ingredient | Quantity | Notes |
| Heavy cream | 2 cups (480 ml) | |
| Large egg yolks | 5 | Save the whites |
| Powdered erythritol | ⅓ cup (40 g) | For the custard |
| Vanilla extract | 2 tsp | Or the seeds of 1 vanilla bean |
| Golden erythritol | 2 tbsp | For the top |
Powdered for the custard, golden for the top. Powdered sweetener dissolves straight into the yolks. Golden granulated sweetener is what melts and browns under the torch.
You need a kitchen torch for the best top. A broiler works in a pinch, and I explain how below, but it is harder to control.

How to Make Keto Creme Brulee
1. Warm the cream
Heat the cream in a saucepan over medium heat until it steams and the first small bubbles appear around the edge. Do not let it boil. Take it off the heat, stir in the vanilla, and let it cool for 10 minutes. Meanwhile, heat the oven to 325°F and put a kettle of water on.
2. Whisk the yolks
In a large bowl, whisk the egg yolks with the powdered erythritol until they turn pale and smooth, about a minute.
3. Combine slowly
Pour the warm cream into the yolks in a thin stream, whisking all the time. Pour too fast and the yolks cook into lumps. Whisk gently rather than hard, so you do not beat in a layer of foam. Skim off any bubbles that do rise to the top.

4. Fill and set up the water bath
Set five 5-ounce ramekins in a baking dish and divide the custard between them. Put the dish on the oven rack, then pour hot water from the kettle into the dish until it comes halfway up the sides of the ramekins. Doing it in the oven means you do not have to carry a dish of sloshing water.
5. Bake to a wobble
Bake for 35 to 40 minutes. They are ready when the edges are set and the center still jiggles like jelly when you nudge the dish, but is not liquid. If a custard starts to puff up or rise, it is overbaked.

6. Cool and chill
Leave the ramekins in the water bath for 20 minutes, then lift them onto a rack to finish cooling. Cover each with plastic wrap and refrigerate for at least 4 hours, until completely cold. The custard firms up as it chills.
7. Torch the tops
Just before serving, blot any moisture off the tops with a paper towel. Sprinkle about a teaspoon of golden erythritol over each custard and tilt the ramekin so it covers the surface evenly. Hold the torch a few inches away and move the flame steadily over the top until the sweetener melts, bubbles and turns amber. Let them stand for 5 to 10 minutes so the top hardens, and do not touch it before then; melted sweetener is very hot.

Recipe Tips and Variations
No torch? Put the sweetened ramekins on the top oven rack under a hot broiler for about 2 minutes, watching every second. The sweetener can go from melted to burnt very quickly, and the custard warms up a little, so chill them for 10 minutes afterward.
Vanilla bean. Split a vanilla bean, scrape the seeds into the cream and drop the pod in while it heats, then lift the pod out before mixing. The custard gets those little black flecks.
A lighter version. Replace up to two-thirds of a cup of the cream with unsweetened almond milk. The custard is softer and a little less rich, so check it at 30 minutes.
Five egg whites left over? Two of them make a tray of my keto brownie bark. Or add one more white to all five and you have the six my keto pavlova needs.
Serving Suggestions
Serve them within about 20 minutes of torching, while the top is at its crispest. A few raspberries or blackberries on the side cut the richness nicely. If you love a vanilla custard, my keto Portuguese egg custard tarts put one in a buttery almond flour crust.
Storage
Before torching: the baked custards keep, covered, in the fridge for up to 3 days, which makes this a great make-ahead dessert.
After torching: serve them right away. In the fridge the caramelized top softens and turns sticky within a few hours.
I do not freeze them. The custard turns watery and grainy when it thaws.
Frequently Asked Questions
What is the best sweetener for a keto creme brulee topping?
A golden or brown-style erythritol blend. It melts, browns and sets into a hard, crackly layer like sugar. Allulose browns but stays sticky, and xylitol never hardens properly.
Why is my creme brulee runny?
It came out of the oven too early, or it was not chilled long enough. The center should jiggle like jelly but not slosh. Give it the full 4 hours in the fridge before judging the set.
Why does my creme brulee taste eggy or look curdled?
It overbaked, or the oven ran hot. Pull the custards while the centers still wobble, always use a water bath, and check them at 35 minutes.
How many carbs are in keto creme brulee?
Each ramekin is 3.5g net carbs and 383 calories, almost all of it from the cream and yolks. The sweetener is not counted, in line with how it is treated across this site.
