The first low-carb banana bread I baked smelled incredible for about an hour. Then I cut into it. The top had gone nearly black at the edges, the middle was damp, and the whole loaf tasted more like a sweet omelet than anything you would spread butter on.

This keto banana bread is the one I kept going back to fix. It has no bananas at all, and it still tastes like the loaf you grew up with: warm cinnamon, toasty walnuts and that unmistakable banana aroma, in a tender, moist slice with 3.5g net carbs. It toasts well, freezes well, and does not taste of egg.
How Banana Bread Tastes Like Banana With No Bananas
Bananas are the one ingredient that cannot stay. A single medium banana has about 24g net carbs, and most banana bread recipes call for three. That is roughly 70g of net carbs before a gram of flour or sugar goes into the bowl.
The good news is that most of what we recognize as banana bread is aroma, not fruit. Banana extract carries that ripe banana smell. Cinnamon and walnuts do the rest, because they are what our brains expect to taste alongside it. With all three in the loaf, nobody I have fed it to has asked where the bananas went.
The trickier part is texture, and three choices handle it:
- Allulose in the sweetener. It holds on to moisture, so the crumb stays soft for days. It also browns faster than sugar, which is why the loaf gets a foil tent halfway through.
- Room-temperature eggs and milk. Cold ingredients firm up the creamed butter into small lumps, and the batter never comes together smoothly.
- A full bake and a full cool. An underbaked center is what tastes eggy. A warm almond flour loaf also crumbles when you slice it, so patience pays twice here.

Take the eggs and almond milk out of the fridge 30 minutes before you start. It is the easiest step in the recipe to forget and one of the ones that matters most.

Measure the banana extract exactly. Two teaspoons tastes like banana bread. A generous extra splash starts to taste like banana candy, and there is no taking it back.
Walnuts are optional, but the nutrition figures include them. Pecans work the same way. If you leave them out, the carbs per slice drop slightly.

Step-by-Step Instructions
1. Heat the oven and line the pan
Heat the oven to 350°F. Line an 8½ by 4½-inch loaf pan with parchment paper, leaving some overhang on the long sides so you can lift the loaf out later. A 9 by 5-inch pan gives a flatter loaf that can finish sooner, so check it early if that is what you have.
2. Whisk the dry ingredients
In a medium bowl, whisk together the almond flour, coconut flour, baking powder, cinnamon, xanthan gum and salt. Break up any lumps of coconut flour with the whisk, because they stay lumpy in the batter.
3. Cream the butter and sweetener
In a large bowl, beat the softened butter and the allulose blend with a hand mixer until light and fluffy, about 2 minutes.
4. Add the eggs, milk and extract
Beat in the eggs one at a time, mixing well after each. Then beat in the almond milk and banana extract. If the mixture looks a little curdled at this point, keep going; it smooths out once the dry ingredients go in.
5. Combine and add the walnuts
Add the dry ingredients to the wet ones and beat on medium speed until the batter is thick and even, with no dry pockets. Stir in ¾ cup of the walnuts. Spread the batter into the pan, smooth the top, then scatter the remaining ¼ cup of walnuts over it and press them in lightly.

6. Bake, then tent with foil
Bake for 30 to 40 minutes, until the top is golden brown. Then lay a loose sheet of foil over the pan and bake for another 20 to 25 minutes, until a toothpick pushed into the center comes out clean.
Do not skip the foil. Allulose browns much faster than sugar, and without the tent the top and the walnuts go from golden to bitter long before the middle is done. That was exactly what happened to my first loaf.

7. Cool completely before slicing
Leave the loaf in the pan for 15 minutes, then lift it out by the parchment onto a rack and let it cool completely, about 1½ hours in all. Slicing it warm is the fastest way to a crumbly loaf. Almond flour needs to cool to hold together, and the texture and flavor both settle as it does.

Recipe Tips and Variations
Toast the walnuts first for a deeper, nuttier loaf: 5 minutes in a dry skillet over medium heat, stirring, until fragrant. Cool them before they go into the batter.
Chocolate chip banana bread. Swap the ¾ cup of walnuts in the batter for ½ cup of sugar-free chocolate chips.
Warmer spice. Add ¼ teaspoon of nutmeg with the cinnamon.
Dairy-free. Use softened coconut oil in place of the butter, at the same amount.
Serving Suggestions
A thick slice with a pat of salted butter is hard to beat. Toasted in a dry skillet until the edges crisp, it is even better, and it makes a filling breakfast with a mug of bulletproof coffee.
For dessert, warm a slice and top it with a spoonful of whipped cream and a sprinkle of cinnamon. A smear of cream cheese is good too.
Storage and Reheating
Counter: wrapped, for 1 to 2 days.
Fridge: in an airtight container for up to 1 week. The crumb firms up when cold, so let slices sit out for a few minutes or warm them before eating.
Freezer: wrap individual slices and freeze for up to 3 months. Toast straight from frozen, or thaw on the counter.
Reheating: 10 to 15 seconds in the microwave softens a slice. A dry skillet over medium heat gives you crisp, buttery edges.

Does keto banana bread really taste like banana bread?
The aroma and flavor come across strongly, thanks to the extract, cinnamon and walnuts. The texture is a little denser and more tender than a flour loaf. If you want banana in a spoonable form, my keto banana pudding uses the same trick.
Why does my keto banana bread taste eggy?
Usually because the center is underbaked, or it was sliced warm. Bake until a toothpick comes out clean, cool it completely, and keep the full 2 teaspoons of cinnamon.

You can, but the carbs climb quickly. Even half a medium banana adds about 1g net carbs to every slice and makes the loaf wetter, so it may need longer in the oven.
