The usual way people make low-carb french toast is to buy a loaf of keto bread and treat it like the real thing. It rarely works. Most store-bought low-carb slices are full of fiber and air, so they drink up the egg mixture in a second, go limp, and tear when you try to flip them. You end up with sweet scrambled eggs and bread crumbs in the pan.
This recipe starts one step earlier. You make a small, dense almond flour bread in the microwave first, in about 2 minutes. It is sturdy enough to dip, it browns beautifully in butter, and it carries the cinnamon and vanilla the way a thick slice of brioche does. Then it is classic french toast: a quick dip in an egg and cream custard and a minute or so a side in a buttered pan.
The whole thing takes 25 minutes, including the time the bread needs to cool. It makes 8 triangles, which is a plate of 4 for two people at 4.1g net carbs a serving.
Why This Keto French Toast Works
The bread is built for soaking. Almond flour gives it body and a buttery flavor. A little psyllium husk powder holds it together, so it bends instead of crumbling when it is wet. Baking powder keeps it from being heavy.
It cools before it gets dipped. Hot bread from the microwave is soft and steamy inside. Ten minutes on a rack firms it up and lets the steam escape, so the custard sits on the outside instead of turning the middle to mush.
A quick dip, not a soak. Bakery bread wants a long soak. This bread does not. A couple of seconds on each side is all it needs, and the custard sets into a thin golden crust in the pan.
Medium heat and real butter. Butter gives the edges that crisp, caramelized look, and medium heat keeps the cinnamon in the custard from scorching before the egg sets.

Blanched almond flour matters here. Almond meal, made from almonds with their skins on, gives a coarser, darker bread that does not hold together as well. Psyllium husk powder is sold next to the fiber supplements in most grocery stores; buy the fine powder, because whole husks leave the bread gritty. A powdered sweetener dissolves into the custard without leaving crunchy grains.

How to Make French Toast with Almond Flour Bread
1. Mix the bread
Put 2 tablespoons of butter in a small square or rectangular microwave-safe dish, about 5 inches across, and microwave for 20 to 30 seconds to melt it. In a small bowl, stir together the almond flour, psyllium husk powder, baking powder and salt. Tip the dry mix into the melted butter, add 2 eggs, and whisk with a fork until smooth. Spread it level with the back of a spoon.
2. Cook it in the microwave
Microwave on high for 90 seconds, then check the center. It should be firm and spring back when you press it. If it is still wet in the middle, keep going in 15-second bursts; with this double batch it usually takes close to 2 minutes. No microwave? Bake it at 350°F for 15 to 20 minutes, until firm and a toothpick comes out clean.
3. Cool, then slice
Run a knife around the edges and turn the bread out onto a rack. Let it cool for 10 minutes. This is the step people skip and regret: warm bread falls apart in the custard. Once it has cooled, cut the square in half through its thickness to make two thinner squares, then cut each square into 4 triangles. You will have 8 pieces.

4. Whisk the custard
In a shallow bowl, whisk the remaining 2 eggs with the heavy cream, cinnamon, vanilla and 1 teaspoon of powdered sweetener. Whisk until no streaks of egg white are left. The cinnamon tends to float on top, so give it another stir between batches.
5. Dip and fry
Melt 1 tablespoon of butter in a large nonstick skillet over medium heat. When the foaming settles, dip 4 triangles into the custard, a couple of seconds per side, and lay them in the pan. Cook 60 to 90 seconds a side, until deep golden brown and the custard on the surface has set. Move them to a warm plate, add the second tablespoon of butter, and repeat with the rest.

6. Dust and serve
Dust the triangles with the last teaspoon of powdered sweetener and serve right away, with a drizzle of syrup if you like. It is at its best in the first few minutes, while the edges are still crisp.

Recipe Tips and Variations
- Pieces tearing in the custard? The bread was still warm, or it sat in the dip too long. Let it cool fully and keep the dip short.
- Browning too fast? Turn the heat down a notch. Cinnamon and butter both burn quickly over high heat, and the inside needs a minute to warm through.
- Want it less eggy? Lightly toast the cooled bread slices before you cut the triangles. It dries the surface and gives the finished toast a firmer bite.
- Make it dairy-free. Use coconut oil for the bread and avocado oil in the pan, and swap the heavy cream for full-fat coconut milk.
- Change the spice. A pinch of nutmeg or cardamom in the custard is lovely in the fall. Orange zest works too.
Serving Suggestions
Sugar-free syrup is the obvious topping. Our keto maple syrup is thick and pourable, and it stays smooth instead of turning gritty, at 0.1g net carbs for 2 tablespoons. A spoonful of whipped heavy cream and an extra pinch of cinnamon are just as good.
For a bigger breakfast, add something savory on the side: a couple of silky keto egg bites or a few slices of turkey bacon. A mug of bulletproof coffee makes it a proper weekend brunch.
Storage and Reheating
Make ahead: the bread can be made a day ahead. Wrap it once it is cool and keep it in the fridge; slightly dry, day-old bread actually dips even better. Whisk the custard and fry just before eating.
Fridge: cooked french toast keeps in an airtight container for up to 2 days.
Freezer: freeze the cooked triangles on a tray in a single layer, then move them to a freezer bag for up to 3 months.
Reheat: warm them in a dry skillet over medium heat for a minute or two a side, or in a toaster, until hot and crisp again. The microwave works but leaves them soft.
Frequently Asked Questions
Is french toast keto?
Regular french toast is not, because it is made with wheat bread, and a single slice of white bread carries more carbs than a whole serving of this recipe. Made with almond flour bread and a sugar-free custard, a serving of this version has 4.1g net carbs.
Can I use store-bought keto bread?
You can, but choose a firm, dense loaf and let the slices dry out for an hour or two first. Light, airy low-carb breads soak up the custard too fast and fall apart in the pan. Dip them very briefly.
Why does my low-carb toast taste eggy?
Both the bread and the custard are made with eggs, so a little egg flavor is normal. Cooling the bread fully, using the vanilla and cinnamon, and browning the toast well all help. Lightly toasting the bread before you dip it helps the most.
Can I make keto french toast in the oven?
The bread, yes: bake it at 350°F for 15 to 20 minutes instead of using the microwave. The dipped triangles are best in a skillet, though. The pan is what sets the custard into a thin, crisp crust in a minute or so a side.
