The first batch I made emptied itself into the air fryer basket.
Twelve hollow shells and a lake of browned cheese underneath. I had breaded them properly, or so I thought, and given them twenty minutes in the freezer because that seemed like plenty.
It is not plenty. Twenty minutes freezes the outside of the cheese and leaves the core soft, and that core melts long before the coating has time to crisp and hold. Two hours minimum. Overnight is better. That single change fixed everything.
The second thing that matters is the order you bread them in. A dusting of almond flour goes on the bare cheese first, before any egg. Cheese is slick and non-porous, so egg slides right off it. The flour gives the egg something to grab.
Get those two things right and these are genuinely excellent. Shattering crust, proper cheese pull, 1.9g net carbs for two sticks. The frozen ones from a box are usually 15g or more for the same, and they somehow still taste like the box.
Active work is about fifteen minutes. The freezer does the rest while you get on with your day.
Why This Coating Holds
Three things go into the crumb, and each one is doing a different job.
Parmesan is what actually crisps. It holds almost no water, so in hot oil or a hot air fryer it browns and hardens rather than steaming. This is the same reason a parmesan crisp works. Almond flour on its own will not do this — it goes golden but stays soft.
Almond flour gives the crust body. Parmesan alone would melt into a thin shell and slide. The flour bulks the coating out so there is something to bite through.
Coconut flour is the quiet one. Two tablespoons is barely anything, but coconut flour absorbs several times its weight in moisture. It mops up whatever the egg and the melting cheese give off, which is exactly the water that would otherwise turn your crust soggy from the inside.
Almond flour first, then egg, then crumbs. Twice. A single coat will leak. Every time. The double layer is what creates a shell thick enough to survive the moment the cheese turns liquid.

Step-by-Step Instructions
1. Prep the cheese and the coating
Unwrap the string cheese and cut each one in half crosswise. You want short stubby pieces, not long thin ones — less surface area means less chance of a blowout.
Stir the ¾ cup almond flour, parmesan, coconut flour, Italian seasoning, garlic powder and salt together in a shallow bowl. Break up any lumps of coconut flour now; they will not disperse later.
Set up three shallow bowls: plain almond flour, beaten eggs, seasoned crumbs.
2. Bread them twice
Roll a piece of cheese in the plain almond flour until it is lightly and completely dusted. Into the egg, letting the excess drip off. Then into the crumbs, pressing them on firmly.
Then back into the egg and back into the crumbs a second time. Skip the plain flour on the second pass, it has already done its job.
Use one hand for the wet bowl and one for the dry. Otherwise you end up with breaded fingers and bald cheese.

3. Freeze solid
Lay them on a parchment-lined tray, not touching, and freeze for at least two hours. Overnight is better and they keep for two months at this stage.
This is the step that decides whether this recipe works. A stick that is cold on the outside and soft in the middle will burst. Give it the full two hours.

4. Cook them, three ways
Cook straight from frozen. Never thaw them first.
Air fryer — my usual. 390°F for 4 to 5 minutes, in a single layer with space between them. Spray lightly with oil first. Start checking at four minutes; the moment the coating is golden, they are done.
Oven. 400°F for about 7 minutes on a parchment-lined sheet, sprayed with oil. Slightly less crisp, but you can do the whole batch at once.
Deep fry — the crispiest by a distance. Oil at 350°F, and they need only 1 to 2 minutes, turning once. Drop a pinch of crumbs in to test: it should sizzle straight away. Fry three or four at a time so the oil temperature holds.
Almond flour browns faster than wheat, so whichever method you pick, go by colour rather than the clock.
5. Serve immediately
Give them one minute to stop being molten, then serve. The cheese pull is best in the first five minutes and gone by fifteen, so these are not a make-ahead-and-plate dish.
Recipe Tips and Variations
Watch them, do not trust the timer. Every air fryer runs differently and the window between golden and blown out is about forty seconds.
Do not crowd the basket. Sticks touching each other trap steam, and steam is the opposite of crisp. Two batches beats one bad one.
Patch any bare spots before freezing. Hold the stick up and look for exposed cheese. That gap is exactly where it will burst. Dab it back through egg and crumbs.
Nut free? Swap all the almond flour for finely grated parmesan — use 1¼ cups in total and keep the coconut flour. The crust comes out thinner but it still crisps, because parmesan is doing most of that work anyway.
Spicy version. A teaspoon of smoked paprika and half a teaspoon of cayenne in the crumb mix. Excellent with ranch.
Common mistake — using fresh mozzarella. It has to be the firm low-moisture string cheese kind. Fresh mozzarella is far too wet and will steam its way out of any coating you build.
Common mistake — skipping the coconut flour. It looks like an optional extra. It is the thing absorbing the moisture that would otherwise soften your crust from the inside.
Serving Suggestions
Marinara is the obvious one and the right one. A low-sugar jarred marinara warmed with a pinch of oregano takes two minutes.
If you want something creamier, keto alfredo sauce is very good here, and keto ranch dressing is what most people reach for anyway.
As part of a bigger spread, put them out with keto onion rings and a bowl of keto nachos. That is a full basket of bar food and none of it will cost you the day.

Storage and Reheating
Freeze them raw. This is the real win. Bread the whole batch, freeze on a tray until solid, then bag them. Two months, and you can cook four at a time straight from frozen whenever you want them. No thawing, no extra time.
Cooked leftovers. Three days in the fridge, though they are never quite the same. The cheese firms up and the pull is gone.
Reheating. Air fryer at 400°F for two to three minutes. The microwave turns the coating limp and the cheese to rubber, so it is not worth doing.

Why did my keto mozzarella sticks leak everywhere?
Three usual causes, in order of likelihood. The cheese was not frozen solid all the way through, so two hours minimum. There was only one layer of coating instead of two. The oven is the weakest of the three but it handles the whole batch at once, which matters if you are feeding a crowd.
