My first tray of sugar-free snowballs came out of the oven as flat little discs. Not balls. Pucks, with lacy edges, that cracked when I tried to roll them in the coating.
The ones that survived had a second problem. By the next morning the white coat had vanished into the cookie, leaving them damp and patchy instead of snowy.
Both have simple fixes. These keto snowball cookies hold a perfect dome, stay buttery and sandy inside, and keep a thick white coat for days. The same cookie goes by Russian tea cakes and Mexican wedding cookies, and it is 0.9g net carbs each.
Why These Keto Snowball Cookies Keep Their Shape
Freeze the balls before baking. Almond flour dough has no gluten to hold it up, so the butter melts and the cookie slumps before the outside can set. Fifteen minutes in the freezer gives the outside a head start, and they bake up round.
Toast the pecans. Raw pecans taste mild and slightly waxy. Five minutes in a dry skillet turns them deep and nutty, and in a cookie with only six ingredients, that is a big part of the flavor.
Roll them twice. The first roll happens while the cookies are still warm. The coating melts very slightly and turns into a thin sticky base. The second roll, once they are completely cool, lands on that base and stays powdery white.
Use an erythritol-based powder for the coating. Powdered allulose draws moisture from the air and from the cookie, so the coat turns tacky and translucent within a day. An erythritol blend stays dry and bright.

Ingredients

| Ingredient | Quantity | Notes |
| Unsalted butter | ½ cup (113 g) | Softened |
| Powdered erythritol-monk fruit blend | ⅔ cup (80 g) | For the dough |
| Vanilla extract | 1 tsp | |
| Blanched almond flour | 1⅔ cups (187 g) | Superfine |
| Fine sea salt | ⅛ tsp | |
| Pecans | 1 cup (109 g) | Toasted and finely chopped |
| Powdered erythritol-monk fruit blend | ½ cup (60 g) | For coating |
The butter must be soft, soft enough that a finger presses into it easily. Cold butter will not cream with the sweetener, and the dough ends up crumbly and hard to roll.
Powdered sweetener in the dough, not granulated. These bake for barely a quarter of an hour, which is not long enough to melt granulated crystals, so they stay gritty between your teeth. Powdered disappears into the butter as it creams.
Chop the pecans finely, to about the size of rice. Big pieces push through the sides of the cookie and make it crack when you roll it.
Recipe Timing
| Order | Step | Time |
| 1 | Toast, cool and chop the pecans | 10 minutes |
| 2 | Make the dough and roll 24 balls | 15 minutes |
| 3 | Freeze the balls | 15 minutes |
| 4 | Bake at 350°F | 12–14 minutes |
| 5 | First roll warm, cool, second roll | 35 minutes |
Step-by-Step Instructions
1. Toast the pecans
Spread the pecans in a dry skillet over medium heat and stir often for 4 to 5 minutes, until they smell nutty and darken a shade. Tip them onto a plate to cool, then chop finely. Pulsing in a food processor works too, but stop while they still look like coarse crumbs, before they turn oily.

2. Cream the butter and sweetener
Beat the softened butter with ⅔ cup of the powdered sweetener for about 2 minutes, until pale and fluffy. Beat in the vanilla extract.
3. Finish the dough
Add the almond flour and salt and mix on low until a soft dough forms, then stir in the chopped pecans. It should hold together when you squeeze a little in your palm.
4. Roll and freeze
Line a baking sheet with parchment. Roll the dough into 24 balls of about a tablespoon each, roughly 20 grams if you weigh them, and set them 2 inches apart. Freeze the whole tray for 15 minutes. Heat the oven to 350°F while they chill.

5. Bake
Bake straight from the freezer for 12 to 14 minutes, until the bottoms are golden. The tops stay pale, and that is right. They will feel soft, but they firm up as they cool.
6. Roll once warm, once cool
Let the cookies rest on the sheet for 5 minutes. They are fragile when hot. Put the coating sweetener in a shallow bowl and roll each warm cookie in it gently, then move them to a rack to cool completely, about 30 minutes. Roll them a second time for the thick snowy finish.

Recipe Tips and Variations
Walnuts or hazelnuts work in place of the pecans, toasted the same way. Hazelnuts are worth rubbing in a towel after toasting to lose most of their papery skins.
Almond. Swap the vanilla for ½ teaspoon of almond extract and use toasted sliced almonds, chopped fine.
Cinnamon snow. Whisk ½ teaspoon of ground cinnamon into the coating sweetener for the second roll.
If your cookies still spread, the kitchen was warm or the butter was close to melting. Chill the dough for 20 minutes before rolling it, as well as freezing the balls.
Serving Suggestions
They belong on a holiday cookie plate, piled up next to cut-out keto sugar cookies and something chocolate. The white of the coating makes the whole plate look brighter.
They are also good with coffee or tea, and they pack well into a tin as a gift. If you have pecans left over, my keto pecan pie uses two and a half cups of them.

Storage
Room temperature: airtight, up to 1 week. Freezer: up to 1 month. Freeze them after the first roll, then thaw and give them the second roll just before serving, so the coat looks fresh.
If the coat has faded after a few days, a quick third roll brings it back.
Frequently Asked Questions
Why did my keto snowball cookies spread flat?
The dough was too warm when it went into the oven. Almond flour has no gluten to hold the shape, so the butter needs to start cold. Freeze the rolled balls for 15 minutes and bake them straight from the freezer.
Why did the coating disappear?
Either the cookies only had one roll while warm, or the coating was powdered allulose, which absorbs moisture and turns clear. Use an erythritol-based powder and roll them again once they are cold.
Can I make them without nuts?
The pecans are a big part of the texture, but you can leave them out and add an extra ⅓ cup of almond flour. They will be smoother and more like a shortbread ball.
Can I make the dough ahead?
Yes. Roll the balls a day ahead and keep them covered in the refrigerator, then give them the 15 minutes in the freezer before they go into the oven. It is an easy way to bake a tray fresh on the day of a party.
Are these the same as Russian tea cakes?
They are the same cookie under different names: snowballs, Russian tea cakes, Mexican wedding cookies, butterballs. A buttery nut dough baked into rounds and rolled in powder. Some families use walnuts or almonds, which all work here.
How many carbs are in keto snowball cookies?
One cookie is 0.9g net carbs and 112 calories. The sweetener, in the dough and the coating, is not counted, in line with how it is treated across this site.
