The first log I baked looked perfect. Golden, firm on top, smelling of toasted almonds. Then I put a knife through it and it fell apart into a pile of crumbs and a few sad wedges.

That is the problem with keto biscotti. Almond flour has no gluten holding it together, so a warm log is fragile in a way a wheat one never is. The second problem is softness: plenty of almond flour biscotti come out more like a dry cookie than something with a snap.

The fix for both is the same idea. Make the log cold before you cut it, and dry the slices slowly at a low oven temperature. You get 16 crisp biscotti at 2g net carbs each, with a dark chocolate end for dunking.

Why This Keto Biscotti Holds Together

Freezing the log is what stops the crumbling. Cooled for half an hour and then frozen for an hour, the butter in the dough firms up and binds the crumb. A frozen log slices like a block of cheese. A warm one shatters.

Slice straight down. Sawing back and forth tears almond flour apart. One firm downward cut with a sharp serrated knife leaves clean edges.

The second bake is low and slow. At 275°F the slices dry out all the way through before they brown. Hotter, the outsides darken while the middles stay soft. The last step is letting them cool inside the switched-off oven, which finishes the drying.

Half-inch slices matter too. Thicker ones never crisp in the center, however long they bake.

Recipe Overview

  • Prep Time: 15 minutes
  • Bake Time: 38 minutes, in two bakes
  • Cooling, Freezing and Setting: 2 hours 20 minutes

  • Makes: 16 biscotti
  • Net Carbs: 2g per biscotti

Ingredients

Almond flour, sliced almonds, egg, butter and chocolate chips for biscotti

For the biscotti

IngredientQuantityNotes
Blanched almond flour2 cups (224 g)Superfine, not almond meal
Granulated erythritol-monk fruit blend¼ cup (48 g)Not allulose, see below
Baking powder1 tsp
Fine sea salt¼ tsp
Large egg1Room temperature
Unsalted butter¼ cup (57 g)Melted and cooled
Almond extract1 tsp
Sliced almonds⅓ cup (30 g)Roughly broken

For the chocolate dip

IngredientQuantityNotes
Sugar-free dark chocolate chips2 oz (57 g)
Refined coconut oil1 tspThins the chocolate

Why not allulose? Allulose browns fast and holds onto moisture, so allulose biscotti go dark in the second bake and soften again within a day. An erythritol blend dries out properly and stays crisp.

Superfine blanched almond flour gives a smoother, tighter crumb. Almond meal, with the skins left on, makes a coarser log that crumbles more readily under the knife.

Step-by-Step Instructions

1. Make the dough

Heat the oven to 350°F and line a baking sheet with parchment. Whisk the blanched almond flour, sweetener, baking powder and fine sea salt in a large bowl. Stir in the egg, then the melted butter and the almond extract, until it comes together as a stiff dough. Fold in the sliced almonds.

If the dough feels too sticky to shape, chill it for 10 minutes.

2. Shape one flat log

Turn the dough onto the parchment and press it into a flat log about 8 inches long, 4 inches wide and ¾ inch tall. Square off the ends and smooth the top with damp hands. An even height means even baking, and a low, wide log gives you longer slices.

3. First bake

Bake 20 minutes, until the edges are golden and the top is firm to a light touch. The inside will still be soft, which is normal.

4. Cool, then freeze

Let the log cool on the sheet for 30 minutes, then slide it, parchment and all, into the freezer for 1 hour. Lower the oven to 275°F while it chills.

5. Slice it straight down

Move the frozen log to a cutting board. With a sharp serrated knife, cut it crosswise into ½-inch slices, pushing straight down in one firm stroke rather than sawing. You should get about 16.

6. Second bake, then cool in the oven

Lay the slices cut side down on the lined sheet. Bake 10 minutes, carefully turn each one over, and bake 8 minutes more, until the cut faces are just light golden. Do not let them get dark. They keep coloring as they cool.

Turn the oven off, prop the door open with a wooden spoon and leave the biscotti inside until completely cool, about 30 minutes. This is where they go from firm to crisp.

7. Dip in chocolate

Melt the chocolate chips with the coconut oil in a narrow cup in 20-second bursts, stirring between each. Dip one end of each biscotti, let the excess drip off, and lay it on parchment until set, about 20 minutes, or 10 in the fridge.

Recipe Tips and Variations

Lemon. Swap the almond extract for 1 teaspoon of vanilla and add the finely grated zest of one lemon to the dough. Skip the chocolate, or drizzle it thinly instead of dipping.

Pistachio. Use ⅓ cup of shelled pistachios in place of the almonds and swap half the almond extract for vanilla.

Cinnamon. Add 1 teaspoon of ground cinnamon to the dry ingredients and leave off the chocolate.

No chocolate at all. Plain, the biscotti are 1.5g net carbs and 124 calories each.

Serving Suggestions

Biscotti were made for dunking. Dip one in black coffee, or in a mug lightened with my keto coffee creamer. On a cold evening, they are excellent dragged through a cup of keto hot chocolate.

They also travel well, which makes them a good gift: a dozen in a tall jar or a cellophane bag, tied with ribbon.

Storage and Re-Crisping

Room temperature: up to 1 week, in a container with the lid resting loosely on top or under a clean towel. A fully airtight box traps moisture and almond flour softens quickly in it.

Freezer: up to 3 months, frozen in a single layer first and then bagged.

If they soften, spread them on a tray and give them 10 minutes at 250°F, then let them cool on the tray. They crisp right back up.

Frequently Asked Questions

Why does my keto biscotti crumble when I slice it?

It was cut while warm. Almond flour has no gluten, so the log needs to be cold and firm to hold together. Cool it 30 minutes, freeze it an hour, and cut straight down with a serrated knife.

Why are my almond flour biscotti soft and not crunchy?

Usually the slices were too thick, or the second bake was too hot and too short. Keep them at half an inch, bake at 275°F, and let them cool in the switched-off oven.

Can I use coconut flour?

Not as a straight swap. Coconut flour absorbs far more liquid than almond flour and would need a completely different recipe.

For the chocolate dip

  • 2 oz sugar-free dark chocolate chips 57 g
  • 1 tsp refined coconut oil

Instructions

  • Dough: Heat the oven to 350°F and line a baking sheet with parchment. Whisk the blanched almond flour, granulated erythritol-monk fruit blend, baking powder and fine sea salt. Stir in the large egg, then the melted unsalted butter and almond extract, until a stiff dough forms. Fold in the sliced almonds. Chill 10 minutes if too sticky to shape.

  • Crisp: Turn the oven off, prop the door open with a wooden spoon and leave the biscotti inside until completely cool, about 30 minutes.
  • Dip: Melt the sugar-free dark chocolate chips with the refined coconut oil in 20-second bursts, stirring between each. Dip one end of each biscotti and set on parchment until firm, about 20 minutes.

Notes

Freeze the log before slicing. Almond flour has no gluten, and a warm log crumbles under the knife. Cool 30 minutes, freeze 1 hour, then cut straight down.
Keep the slices 1/2 inch thick and the second bake at 275°F. Thicker slices or a hotter oven leave the centers soft.
Storage: up to 1 week at room temperature under a loose lid or a towel, not airtight, or frozen up to 3 months. Re-crisp softened biscotti for 10 minutes at 250°F.
