The first buffalo chicken dip I brought to a party arrived with a slick of orange oil floating on top.
It tasted fine underneath. It looked like something that had been left in a car. I had baked it at 400°F until the top browned, because browned cheese is what the photos show, and in doing that I had cooked the fat straight back out of the cream cheese it was supposed to be emulsified into.

Why This One Does Not Split
A dip like this is an emulsion — fat suspended in dairy protein. Heat it too hard or too long and the emulsion breaks, the fat pools out, and what is left underneath goes slightly grainy. Three things keep it together:
Soften the cream cheese properly and whisk the base smooth first. Cream cheese straight from the fridge leaves little unincorporated lumps, and those lumps are exactly where the separation starts during baking. Whisk the cream cheese, hot sauce, mayonnaise and sour cream into something completely uniform before the chicken or the shredded cheese arrives.
Bake to bubbling, not to browning. Twenty minutes at 350°F. The edges should be visibly bubbling and the centre hot. A browned, blistered top means you went several minutes too far, and that is where the oil slick comes from.
Rest it five minutes before serving. It thickens noticeably as it drops below scalding, which also stops the first person in wearing it.

The two ingredient choices that actually matter
Hot sauce: buy the original, not the wing sauce. They sit next to each other and look almost identical. Original cayenne pepper sauce is essentially zero carbs per tablespoon; the wing sauce version runs about a gram. 1. Poach the chicken in the hot sauce
Put the chicken breasts in a saucepan with ¼ cup of the hot sauce and enough water to just cover them. Bring to a bare simmer, cover, and cook 12 to 15 minutes until cooked through. Lift the chicken out and shred it with two forks; discard the poaching liquid.
Nearly every version of this recipe leans on supermarket rotisserie chicken. Poaching your own takes fifteen minutes, costs less, and gets the buffalo flavour into the meat rather than just coating it — which you notice in the first bite.
2. Whisk the base until it is completely smooth
In a large bowl, whisk the softened cream cheese with the remaining ¼ cup of hot sauce, the mayonnaise, sour cream, garlic powder, onion powder, smoked paprika and black pepper. Keep going until there is not a single lump left and the colour is a uniform pale orange.
This is the step that decides whether the dip splits. If the cream cheese is still cold and lumpy, warm the bowl briefly or microwave the cream cheese for twenty seconds and start again.

3. Fold in the solids
Add the shredded chicken, 1 cup of the cheddar and all the mozzarella. Fold until evenly distributed. Taste it now — this is your last chance to add more hot sauce or a pinch of salt, and it is much easier to judge cold than molten.
4. Bake to bubbling
Heat the oven to 350°F. Spread the mixture into a 1½-quart or 8-inch baking dish and scatter the remaining ½ cup of cheddar over the top. Bake 20 minutes, until the edges are bubbling and the centre is hot through.
Resist browning the top. It is tempting, and every extra minute past bubbling pushes it closer to splitting. If you want colour, put it under the broiler for 60 to 90 seconds at the very end and watch it the whole time — short and violent does less damage than long and slow.

5. Rest and finish
Let it sit 5 minutes, then scatter the green onions and the blue cheese crumbles over the top. Blue cheese goes on at the end, not into the mix — stirred through the whole dip it turns sour and dominates everything, but as a topping it lands in bursts and works beautifully.
What to Serve It With
The crunchy dipper I reach for with this one is Parmesan crisps — salty, rigid enough to scoop a heavy dip without snapping, and you can make them in ten minutes by baking tablespoon mounds of grated Parmesan at 400°F for 5 to 6 minutes until golden, then cooling them flat.
Beyond that: celery sticks, cucumber rounds, mini bell pepper strips, endive leaves (which are shaped like spoons and hold a remarkable amount), broccoli and cauliflower florets, and low-carb tortillas cut into triangles and baked crisp. My keto cheese puffed snacks work as a dipper too.

Slow cooker. Build it, transfer to a small slow cooker, and cook on LOW for 2 hours. Once it is hot, switch to WARM and it will hold happily through a party.

Freezer: I would not. Cream-cheese dips come back from the freezer grainy and weeping, and this one is quick enough to just make fresh.
Reheating: 350°F for 10 to 15 minutes, or the microwave in 30-second bursts stirring between each. If a little oil appears on reheating, stir it back in while it is hot and it will re-emulsify.
