Step-by-Step Instructions
1. Sift the dry ingredients into the cream
Pour the cold heavy whipping cream into a large bowl. Sift the unsweetened cocoa powder and the powdered erythritol blend over the top, then add the vanilla extract and the fine sea salt.
Sifting takes twenty seconds and saves you from cocoa lumps, which never break up once whipping starts. You will be picking little dry pellets out of the finished frosty otherwise.
2. Whip to stiff peaks, then stop
Beat on low until the cocoa disappears, then raise the speed and whip for about 3 to 4 more minutes, until the mixture holds a firm peak that stands straight up when you lift the beaters.
Watch it closely at the end. Cream goes from stiff peaks to grainy to butter faster than you expect, and there is no coming back from that. If it starts looking curdled at the edge of the bowl, you have gone a beat too far.

3. Portion it before it freezes
Divide the mixture between four glasses or small bowls. It freezes far more evenly in four small portions than in one big bowl, where the outside sets hard long before the center does.
For proper soft-serve swirls, spoon the mixture into a zip-top bag, snip off a corner and pipe it into the glasses. It takes an extra minute and it is the difference between something that looks homemade and something that looks like the real thing.
4. Freeze 40 minutes, then stir
Freeze for 40 minutes, until ice crystals are just starting to form at the edges and the surface is firm to a light touch. Stir each glass briskly with a spoon for a few seconds to bring it together into one even, thick, frosty texture.
If your freezer runs cold and it has gone too firm, leave it on the counter for five minutes and stir again. Do not put it back in the freezer to fix it, because a second freeze is where the ice crystals get big.

Recipe Tips and Variations
Vanilla frosty. Leave out the cocoa, cut the sweetener to 2 tablespoons and use 2 teaspoons of vanilla. It sets a little softer, so check it at 35 minutes.
