Make coleslaw at four in the afternoon and by seven it is sitting in a pool of cloudy water. The cabbage has gone limp, the dressing has thinned to nothing, and what you carry to the table is not what you made.
The fix is a step almost no low carb recipe includes. You salt the cabbage first and squeeze the water out of it before the dressing ever arrives. Thirty minutes, and it stays crunchy for three days instead of three hours.
This keto coleslaw makes eight servings at 3.7g net carbs, and there is no sugar anywhere in it.
Why Keto Coleslaw Goes Watery, and How to Stop It
Cabbage is about 92 percent water. Salt in the dressing pulls that water out through the cell walls by osmosis, slowly, over hours — which is exactly what you are watching happen in the bowl. The dressing does not thin because something went wrong. It thins because the cabbage is emptying into it.
So take the water out on your terms. Toss the shredded cabbage with a teaspoon of salt and leave it in a colander for 30 minutes. It will give up a surprising amount. Rinse it, squeeze it in a towel, and what is left is cabbage that has nothing more to lose.
Every keto coleslaw recipe I researched skips this and instead warns you to eat it quickly. One of them says outright that it does not last more than a day. That is treating the symptom.
The trade is texture. Salted cabbage is slightly softer and more bendy than raw, closer to a deli slaw than a raw crunch. I think that is the better coleslaw. If you want it aggressively crisp, shred it thicker.

Celery seed is the one that matters. Leave it out and you have cabbage in mayonnaise; put it in and it tastes like coleslaw. It is a tiny jar in the spice aisle and it will sit in your cupboard for years.
The carrot is there for color and it costs you about 0.4g of net carbs a serving. Leave it out if you are counting tightly and the slaw drops to around 3.3g.

Step-by-Step Instructions
1. Shred it finely
Quarter the green cabbage, cut out the core, and slice it as thinly as you can manage — a mandoline is worth using here, and the slicing disc on a food processor is faster still. Grate the carrot on the large holes of a box grater.
Thin shreds hold dressing; thick chunks shed it. A bagged coleslaw mix works and saves you fifteen minutes, but it is cut coarser than this recipe wants.
2. Salt the cabbage and walk away
Toss the shredded cabbage with the fine sea salt in a colander set over a bowl. Leave it for 30 minutes. Do not add the carrot yet; it holds far less water and turns soft if you salt it.
You will see a real puddle underneath by the end. That is water that would otherwise have come out in the serving bowl.
3. Rinse, then squeeze like you mean it
Rinse the cabbage under cold running water to wash off the salt, or the finished slaw will be far too salty. Then pile it into a clean kitchen towel, gather the corners, and wring it out hard over the sink.
Do it in two batches if the towel is small. The cabbage should come out damp rather than wet, and noticeably reduced in bulk.

4. Whisk the dressing
In a large bowl, whisk the mayonnaise with the apple cider vinegar, the powdered allulose blend, the yellow mustard, the celery seed, the onion powder and the black pepper until it is completely smooth.
Taste it now, while you can still change it. It should taste slightly too sharp and slightly too salty on a spoon, because a pound and a half of cabbage is about to dilute it.

5. Toss and chill
Add the squeezed cabbage and the grated carrot and toss until every strand is coated. Cover and refrigerate for at least an hour.
That hour is not optional either. The celery seed and onion powder need time in the dressing to actually taste of anything, and the cabbage softens just enough to stop being raw.

Recipe Tips and Variations
Make the dressing a day ahead. It keeps two days on its own and the flavor is better for the wait. Dress the cabbage on the day.
Red cabbage. Half green and half red looks far better on a plate. Red cabbage bleeds into the dressing after a few hours, so dress it just before serving if the color matters.
Vinegar slaw. Skip the mayonnaise entirely and use ¼ cup olive oil with ¼ cup cider vinegar. It keeps nearly a week and suits a hot day better.
Spicy. A tablespoon of sugar-free hot sauce and ¼ teaspoon of cayenne in the dressing.
Creamier. Swap 2 tablespoons of the mayonnaise for sour cream. It tastes lighter without actually being lighter.
Serving Suggestions
Next to anything from the grill. It is the standard partner to my keto chicken wings, and a scoop on the side of a bowl of keto sloppy joes does the job a bun used to.
It is also good piled directly on top of pulled chicken, which sounds like a lot and turns out to be the best way to eat both.
Storage
Refrigerator: 3 days in an airtight container, and it is genuinely still crunchy on day three, which is the entire point of the salting step.
If a little liquid does gather by day two or three, tip it off and give it a stir. That is normal and far less than an unsalted slaw would produce.
Freezing: no. Mayonnaise splits and cabbage turns to mush.
Frequently Asked Questions
Do I really have to salt the cabbage?
Not if you are serving it within an hour or two. For anything made ahead, it is the difference between coleslaw and cabbage soup.
Is coleslaw keto?
The cabbage is. The dressing usually is not — most bottled and deli coleslaw dressings are heavy on sugar, and a single restaurant serving can run 15 to 20 grams of carbs. Made this way it is 3.7g.
Can I use bagged coleslaw mix?
Yes, and salt it the same way. Use 12 oz of mix, since it already includes carrot, and skip the separate carrot in the ingredient list.
Why powdered sweetener instead of granulated?
Granulated will not dissolve into a cold mayonnaise dressing and you will feel the grains. Powdered disappears.
How many carbs are in a serving?
One of eight servings is 3.7g net carbs and 168 calories. Leaving the carrot out brings it to about 3.3g.
